Christmas Peanut Butter Fudge

Well I am one who loves to cook. Dinners from the simple things like hamburgers to more complex things like eggplant parmasean. I just love to cook. Baking however I prefer over cooking any day. I have cook books that I love searching through for new recipes. I have found a few fudge recipes that I love but there is one that is simple enough and tastes delicious. It goes as follows…

This is right off of the Jiff web site..

1 can (14 oz) Eagle Brand Condensed Sweeted Milk

1/2 c Jiff Creamy Peanut Butter ( I used crunchy and it was just as good)

2 (6 oz) bars of white chocolate or white baking bars chopped

3/4 c chopped peanuts

1 tsp vanilla extract

Directions:

1. In heavy saucepan, heat sweetened condensed milk and peanut butter over medium heat until just bubbly, stirring constantly. Remove from heat. Stir in white chocolate until smooth. Immediately stir in peanuts and vanilla.
2. Spread evenly into wax paper lined 8- or 9-inch square pan. Cool. Cover and chill 2 hours or until firm. Turn fudge onto cutting board; peel off paper. Sprinkle with additional chopped peanuts if desired. Cut into squares. Store leftovers covered in refrigerator. Because this is a simple recipe the kids can help easily with this. THey will love it and it will be fun for all of you. Enjoy your homemade fudge.

    Jenn,
    We are kindred spirits, I love to bake as well. And I love to take a recipe and make it better with my own creativity. I usually use the fudge recipe on the back of the marshmallow cream jar for chocolate fudge. It comes out perfect every time. However, this one is different and I can’t wait to add it to my Christmas goody baking. Thanks.
